Sweet Layered-Rice Cakes

You will need

  • 1100 cc coconut milk from 2 coconuts
  • 500 gr rice flour
  • 225 gr granulated sugar
  • 1 tsp salt
  • tsp vanilla
  • Red and green food coloring


What You do

  1. Boil the coconut milk over medium flame, then remove and cool.
  2. Mix the flour, sugar, salt, and vanilla. Pour in the coconut milk while stirring thoroughly.
  3. Divide the dough into three parts. Color one part green, the other red. Mix well. Keep the last part uncolored.
  4. Prepare a 22 cm square baking pan. Coat the pan lightly with cooking oil. Put about 100 cc of red dough in the pan and steam for about 10 minutes until the surface of the dough hardens. Pour over 100 cc of the uncolored dough, steam for another 10 minutes, then add the green dough and steam for the last 10 minutes. Repeat with the rest of the dough.
  5. Steam again for about 30 minutes. Remove and let cool. Cut into pieces according to your own taste.

Note:

Do not forget to cover the lid of the steamer with a napkin to protect the cake from steam droplets.

Serve approximately 30 slices
